Hot beef salad
A hot beef salad from the book "Elementary Cookery Courses" by Gordon Ramsay (Gordon Ramsay's Ultimate Cookery Course)
It is the perfect combination of sweet, sour, salty and bitter.
2 Beef tenderloins for 200 - 250 g each
Olive oil, for frying
2 carrots
6 radishes
Cherry tomatoes 200g
A bunch of mint
1 shallot
3 green onions
½ large cucumber
2 young lettuce lettuce
Sea salt and freshly ground black pepper
4 tablespoons peanut
FOR REFUELING
1 clove of garlic
1 red chili pepper
2 tsp. palm sugar
2-3 tbsp. l fish sauce
Juice of 1-2 limes

Cut the tenderloin and pepper, lightly pressing on the meat. Fry on a tablespoon of olive oil in a well-heated frying pan, for 2.5 minutes on each side. We put the meat to rest, watering the juice from the pan. We prepare the gas station. Remove the seeds from the pepper, chop, add garlic, salt and grind in a mortar until mashed. Add 2 tsp. palm sugar, fish sauce and lime juice.
Prepare the vegetables. Cut the carrots and radishes finely, add shallots, cherry tomatoes cut in half. Add cucumbers, green onions, lettuce and mint leaves. Add a couple of spoons of dressing and stir.

With meat cut off excess fat and cut the meat into the fibers. Spread out on top of the salad. Then fry the peanuts, crush a little, then cut with a knife and decorate them with a salad. And finish everything with a tablespoon of sauce
