Dessert Recipes For One

As a single guy or gal, it can often be difficult to shop and cook for just one person. Most items sold in the supermarket are geared towards family cooking; especially dessert items; but don't get discouraged! There are still several ways that you can create your own single or double-serving desserts with very little preparation. To prove it, this article lists three terrific dessert recipes that won't have leftovers crowding your fridge! 

Lemon Trifle 

1 can lemon curd or pie filling 
1 small angel food cake 
1 small tub of whipped cream or 1 can of Reddi Whip a few crushed vanilla wafers, lemon rind, or other preferred topping 

Cut the angel food cake into bite-sized squares. In a martini glass (or small bowl, if you prefer), place a few of the cake squares in the bottom. Spoon a few dollops of lemon curd on top of the cake squares. Spoon a few dollops of whipped cream on top of the lemon curd (or squirt a thin layer of whipped cream if you're using the canned sort). Repeat the process until you reach the top of the glass or bowl. Sprinkle a few crushed vanilla wafers on top-or any other sweetie you like. Refrigerate until serving. If you have too much of the ingredients left over, make another trifle to save for tomorrow! 

Chocolate Chip Cookie Dough 

3 tbsp flour 
1 drop vanilla extract 
2 tbsp butter 
1 tsp honey chocolate chips, m&m's, crumbled Reese's, or crumbled Oreos 

In a small bowl, cream together the honey and butter. Then add the flour and mix well. Add vanilla and your choice of chocolate sweet. Once this is will mixed, you can either eat it straight away or allow it to chill for a bit. 

Coffee Cup Cake 

4 tbsp flour 
2 tbsp cocoa powder 
4 tbsp sugar 
3 tbsp oil 
3 tbsp milk 
2 drops vanilla extract 
1 egg 

In a large coffee mug, mix together the flour, cocoa powder, and sugar. In a bowl, thoroughly mix together the oil, milk, vanilla extract, and egg. Pour the wet mixture into the coffee mug and blend until all ingredients are moistened. Pop in the microwave for 3 minutes at 1000 watts (you may have to adjust your time accordingly). The cake will likely rise above the rim of the cup while cooking-this is fine. Allow it to cool for a few minutes before serving. Great with a dollop of whipped cream or a sprinkle of powdered sugar!
