Protein Bread from the Scarsdale Diet Program

ingredients:

A cup hot water
One tablespoon of dry yeast
½ teaspoon of salt
A teaspoon of sugar
½ teaspoon apple cider vinegar
1/2 cup soy flour
1/4 cup gluten flour (gluten flour has a lot less carbohydrate than ordinary flour.) You can replace gluten-rich bread flour If you can not find gluten-free flour.)
1 1/2 cup whole wheat flour.

Place the water in a mixing bowl medium. Sprinkle the dry yeast into the bowl and let stand until the yeast dissolves (five minutes or more). Add salt, sugar and vinegar to the bowl. Mix well.

Sift together the soy flour and gluten. Slowly add the yeast mixture to the bowl.

Sift the whole wheat flour and add it to the mixture in a bowl. Put the mixture slowly until the paste sticks (and not on the sides of the bowl). If you have a blender or a food processor that has kneading hooks, they help a lot with the mix.

Lightly flour a board or other surface. Pick up the dough into a ball with floured hands and place on the surface. Knead for 5 minutes until the dough is smooth and elastic.

Put in the small bread pan that has been sprayed with nonstick. Adjust the dough shape of the pan (form bread). Do not try to touch the dough completely to the sides of the mold. Lid with slightly soaked towel and located in a warm (draft free) place to mount. Let rise for two to three hours until the dough has at least doubled and reaches the top of the bread pan.

Preheat the oven to 325 degrees.

Cook oven-warmed bread for one hour or until golden brown.
