Tajine of Lamb with artichokes
Ingredients:
1.5kg of mutton breast cut into 12 pieces
15 little fund artichokes
2 onions into skinny strips
2 cloves of garlic ecrassees
1 bouquet garni (coriande, parsley)
2 tomatoes
2 tablespoons oil
1 tbsp. sweet pepper
1 confit lemons
salt, pepper
Preparation of tajine of Lamb with artichokes:
To prepare the Lamb Tagine direction for artichokes:
In a Dutch oven, heat the oil over very low heat, put the meat and onions, the garlic to brown for ten minutes then salt and pepper and put the sweet pepper and 1/2L of water. Let the meat cook for 30 to 35 minutes.
Add tomatoes seeded and cut in four and bouquet garni and artichoke funds. Cover and leave on very gentle fire for half an hour. Just before serving, add the candied lemon slices and let simmer for 5 minutes.
Serve hot adorned meatwith artichokes and patterned with the sauce.
