1/2 cup unsalted butter

1/2 cup sugar

1 egg

1 1/2 cups of flour

2 teaspoons (tsp) baking powder

6 - 10 apples (for best results; cook ahead, cool and drain off liquid)

Options: bread crumbs, cinnamon, icing sugar 



Cooking Directions for this Norwegian Apple Cake Recipes #1

Cream softened butter and sugar, add egg, add flour with baking powder, mix well.

Make a ball and then divide 2/3 of the dough for the base 1/3 for the lattice.

Add bread crumbs if you wish (if the apple texture is very soggy, I recomment using the breadcrumbs. Add apples and sprinkle with cinnamon if desired.

Roll out rest of mix, cut into strips to create lattice top.

Bake in oven 350 degrees for 45 minutes to 1 hour (less if in a glass pan). If desired, top with icing sugar when completetly cooled.

Our friend Judy is revising an "Old Family Recipe" book she put together in 1998 and gave to members of her family to showcase some of their favorite recipes, so she shared the following flour-free, quick and easy dessert recipes with us:

Banana Split Cake

(No baking required)


Ingredients

5-7 bananas

3 sticks butter

1 large container of whipped topping

1 bottle of red maraschino cherries

half-cup of crushed pecans

2 cups crushed graham crackers

1 medium can crushed pineapple in its own juice

2 cups powdered sugar

2 eggs

Directions

o Beat eggs, 2 sticks of butter, and powered sugar for 15 minutes. Set aside.

o Mix 1 stick butter and graham cracker crumbs. Pat into 13- x 9-inch pan.

o Spread first mixture over crust, and then cover with sliced bananas.

o Spread well-drained pineapple over the bananas and cover with whipped topping.

o Sprinkle pecans over top, placing a cherry in each section of about the size you plan to serve.

o Refrigerate several hours and serve.

As a single guy or gal, it can often be difficult to shop and cook for just one person. Most items sold in the supermarket are geared towards family cooking; especially dessert items; but don't get discouraged! There are still several ways that you can create your own single or double-serving desserts with very little preparation. To prove it, this article lists three terrific dessert recipes that won't have leftovers crowding your fridge! 

Lemon Trifle 

1 can lemon curd or pie filling 
1 small angel food cake 
1 small tub of whipped cream or 1 can of Reddi Whip a few crushed vanilla wafers, lemon rind, or other preferred topping 

Cut the angel food cake into bite-sized squares. In a martini glass (or small bowl, if you prefer), place a few of the cake squares in the bottom. Spoon a few dollops of lemon curd on top of the cake squares. Spoon a few dollops of whipped cream on top of the lemon curd (or squirt a thin layer of whipped cream if you're using the canned sort). Repeat the process until you reach the top of the glass or bowl. Sprinkle a few crushed vanilla wafers on top-or any other sweetie you like. Refrigerate until serving. If you have too much of the ingredients left over, make another trifle to save for tomorrow! 

Chocolate Chip Cookie Dough 

3 tbsp flour 
1 drop vanilla extract 
2 tbsp butter 
1 tsp honey chocolate chips, m&m's, crumbled Reese's, or crumbled Oreos 

In a small bowl, cream together the honey and butter. Then add the flour and mix well. Add vanilla and your choice of chocolate sweet. Once this is will mixed, you can either eat it straight away or allow it to chill for a bit. 

Coffee Cup Cake 

4 tbsp flour 
2 tbsp cocoa powder 
4 tbsp sugar 
3 tbsp oil 
3 tbsp milk 
2 drops vanilla extract 
1 egg 

In a large coffee mug, mix together the flour, cocoa powder, and sugar. In a bowl, thoroughly mix together the oil, milk, vanilla extract, and egg. Pour the wet mixture into the coffee mug and blend until all ingredients are moistened. Pop in the microwave for 3 minutes at 1000 watts (you may have to adjust your time accordingly). The cake will likely rise above the rim of the cup while cooking-this is fine. Allow it to cool for a few minutes before serving. Great with a dollop of whipped cream or a sprinkle of powdered sugar!

Ingredients:

 For paste:

18 cl of milk,
1 cube of baking yeast of beer,

Oufs 6 450 g of flour,

30 cl of rum

Recipe: 

Dissolve baking yeast in the lukewarm milk,
add the sugar, salt, the oufs and the half of the flour;
cross 4 m to the robot at medium speed until the that mixture is very homogeneous;
add softened butter it cut in small pieces, and delay in the robot 3 m;
add the rest of flour and put vicinity in small speed 2 m;
display in a spread with butter mould, let rest in a lukewarm place about one hour and a half;
preheat the oven in 200 °, put down (especially do not make slip) the mould on the gate, and cook 30 - 35 m;
colour must be brown gold and a planted knife must come out again dryness; take out 2 m from the oven, then afterwards, dice mould... Let cool down 15 m while you prepare syrup by hitting

ingredients

1 can of pineapple in syrup
1 vanilla pod
1 zest of lemon
1 yogurt cake mix To caramelize:
20 g salted butter
3 tablespoons brown sugar
1 tablespoon pineapple syrup

Preparation

Caramelize the pineapple for this, cut 3 slices of pineapple in small dice. Cook them in a saucepan for about ten minutes with the vanilla pod.

Butter the mold well and place a few slices of pineapple rosette at the bottom. Caramelize the butter, sugar and 1 tablespoon of pineapple juice in a saucepan. Once the mixture is slightly caramelized, pour it on the pineapple at the bottom of the mold.

Prepare a yogurt cake following the basic recipe, then add the lemon zest and the cooked pineapple cubes.

Cover the pineapple with dough and put in the oven for about 40 minutes at 180 ° C (th 6/7). When the cake is cooked, take it out and wait about fifteen minutes before unmolding the cake returned to the pineapple.

The Best Italian Custard Cake

Learn to master the art of making a delicious Italian cake. Also known as the "continental cake", it's a very traditional cake used by many Italian families. Not only is one of the most delicious cakes that you taste, but it is also simple, versatile and economic. Just follow the recipe below and remember that the key to cooking is the accuracy and precision. The end result will be perfection.

Cake:

Ingredients:

5 eggs, room temperature

250g castor sugar

2 1/2 tsps vanilla sugar

100g cornflour

100g plain flour

1 1/4tsps baking powder

75mls cold water

Method:

1) Grease a 24cm springform tin and line with grease proof baking paper. Preheat oven to 190 degrees celcius.

2) Separate the eggs into a bowl. Beat egg whites until very stiff with 75mls of cold water. Beat in castor sugar and vanilla sugar very quickly- do not over beat. (If you do not have vanilla sugar you can simply replace it with castor sugar). Blend in beaten egg yolks and beat until mixture forms a figure "8".

3) Sift cornflour, plain flour and baking powder 3 times. Gently fold flour mixture into egg mixture being careful not to knock out the air.

4) Gently spread the batter into prepared baking tin. Bake for 50 minutes until golden brown or a skewer inserted comes out clean. Turn out onto a wire rack to cool.

Lemon Custard:

Ingredients:

500ml full cream milk

75g castor sugar

1 vanilla bean

1/4 cup marsala

3 egg yolks

40g cornflour

strips of peel from 1 lemon (use a potato peeler)

Chocolate Custard:

Ingredients:

500ml full cream milk

75g castor sugar

1 vanilla bean

1/4 cup marsala

3 egg yolks

40g cornflour

3-4 tbsp good quality cocoa powder

Method:

1) Split vanilla pod vertically down the middle and scrape out seeds. Put milk with half the sugar, vanilla seeds and pod, marsala and lemon peel in a large saucepan and bring to a boil.

2) Meanwhile, whisk together egg yolks and remaining sugar. Once incorporated, gradually add the cornflour to form a paste.

3) When milk has boiled remove from heat and pour a little of the milk into the yolk paste, whisk to incorporate. Adding a small amount at the beginning will prevent lumps in your custard. Slowly continue adding until half of the milk is used.

4) Bring the remainder of the milk back to the boil and pour onto the yolk mixture, then tip the whole lot back into the saucepan.

5) Cook over a medium heat stirring constantly with a wooden spoon until the custard thickens. (At first it may look lumpy but dont panic. Keep stirring over heat and it will cook out)

6) Once the custard has thickened pour into a heatproof bowl. Quickly remove the lemon peel and vanilla pod, cover with cling film to prevent it from forming a skin on top. Make sure the cling film touches custard so it won't steam and form water droplets. Refrigerate until cold.

7) Once the custard has cooled it will seem too hard, however begin beating it with an electric mixer and it will come together until smooth and silky. The consitency should be thick but not hard. If you find the custard is a little bit too firm, add about 1 tablespoon of extra milk or more if needed, until it becomes thick and smooth.

To make chocolate custard - Omit the lemon peel. Add the cocoa at the beginning of step three and stir to dissolve. Have a taste and adjust it to how chocolatey you like it. Follow on the remaining steps to making the custard as above.

To assemble cake:

Use about 1/3 to 1/2 cup of liquer such as marsala, or sherry for each layer. For a non -alcoholic version use sweetened cooled coffee as a substitute. See note below.

Once the cake has cooled slice the cake horizontally to make two layers. You should have three discs of sponge. Place one disc of sponge onto a plate and moisten the sponge with chosen liquer or coffee. Spread the lemon custard over the sponge and place the second layer on top. Repeat the process with liquer or coffee mixture and spread over the chocolate custard. Top with the third disc of sponge and cover with cling film. Refrigerate overnight to set. Cake stored in the refrigerator for one or two days will allow flavours to improve.

To decorate:

Ingredients:

300ml thickened whipping cream

2 tsp sugar

2 tsp vanilla essence

3/4 cup flaked roasted almonds or chopped hazelnuts

grated chocolate

Method:

1) Combine cream, vanilla and sugar into a bowl and beat to a soft peak.

2) Spread cream evenly over the sides and top of cake.

3) Press or throw nuts onto the sides of the cake. Collect the fallen nuts and keep repeating the process eventually you will have a wonderful result. Sprinkle top with grated chocolate.

Note- Any kind of your favourite liquer such as Tia Maria, Frangelico, Amaretto or Galliano will be a delicious variation to your cake. Even a combination of both liquer and coffee is very nice.

Whether it be a birthday, christening or wedding, this delicious Italian custard cake is wonderful used for a celebration. Let your imagination run wild with decorating creations and ideas. Experiment with liquer flavour combinations and custard flavours. One variation is to use orange rind instead of lemon rind for the custard with a chocolate liquer, creating a jaffa flavour. The flavour variations and combinations are endless.

It is best served with a hot cup of espresso coffee, or a sweet dessert wine. Enjoy!

INGREDIENTS 

500 g of flour 
20 cl of lukewarm milk 
50 g melted butter 
1 egg 
30 g of caster sugar 
1 packet of vanilla sugar

14 g of baking yeast 
1 teaspoon salt 

For frying: 

A hot oil bath For 

decoration: 

4 tbsp of jam 
2 tbsp of sugar ice 

PREPARATION 

My tips and tricks for success the recipe for the Donuts: 

Dilute the baking yeast in milk. Mix the egg with the milk and melted butter. 

Stir in remaining ingredients and work all to get a homogeneous dough. 

Knead the dough for 10 minutes. 

Cover the dough and let rest in a place warm until it doubles in size. 

Work the dough to hunt in the air and spread it into a thin pastry on a floured work surface. 

Cut the dough using a doughnut cutter and let them rise until they double volume. 

Using a spatula, gently take each doughnut and FRY on both sides in hot oil. 

Drain fritters on paper towels. 

Serve the fritters stuffed with jam and sprinkled with icing sugar.

4 eggs

Preparation

Separate the egg whites from the yolks, beat whites closed combine egg yolks with milk, add the flour, yeast, sugar and salt and blend well till dough is not any lump.
Stir in overwhelmed whites and let stand 1/2 hour minimum.
Heat and grease a frying pan of pancakes with a bit butter or oil Drop alittle ladle of batter within the Pan As before long as a mess of tiny bubbles seem on the surface you'll be able to come your pancakes Let it cook a bit and take away on a towel.

Ingredients For the Cake:

6 eggs, separated
3/4 cup sugar
1/2 teaspoon cream of tarter
3/4 cup water
1/2 cup vegetable oil
1 1/2 tablespoon lemon zest, divided
1 3/4 cup cake flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
For the Filling:
1 cup whipping cream
8 ounces cream cheese at room temperature
2 1/2 cups powered sugar
3 tablespoons lemon juice
1/4 cup powdered sugar and fresh lemon slices for garnish

Instructions

Preheat oven to 350 degrees F. Have a 10-inch, straight-sided tube pan  ready but un-greased.
Separate eggs, setting aside the yolks, and whip the whites in an electric mixer until foamy. Slowly add the sugar and cream of tarter and continue to whip on high until the beater leaves distinct tracks and glossy, stiff peaks form, about 3 minutes. Set aside.
Combine water, vegetable oil and 1 tablespoon of the lemon zest with the reserved egg yolks.
Place the cake flour, sugar, baking powder and salt in a large bowl, and stir with a whisk or fork to combine well.
Using an electric mixer, begin by mixing the wet ingredients until combined, then slowly add the dry ingredients with the machine running. Stop and scrape down the sides completely and continue until everything is well mixed.
Fold together the batter with the egg white mixture just until there are no large swirls of the yellow egg mixture it does not have to be completely mixed.
Spoon batter into the cake pan and bake for 1 hour, until a cake tester inserted in the center comes out clean. Immediately turn the cake in the pan upside down and either rest it on the pans tabs or set it on top of a bottle neck until completely cool, about an hour.
While cake is cooling, prepare the filling: Use an electric mixer to whip the cream to firm peaks. In another bowl, whip the cream cheese until it is smooth. Add the lemon juice and zest, then slowly add the powdered sugar until completely mixed. Fold together the cream cheese mixture with the whipped cream and chill for 30 minutes before assembling the cake.
When cake has cooled, use a table knife to run around the edges and the tube to loosen the cake, then tip it out onto a large plate. Use a serrated knife to cut the cake horizontally into 3 layers. Spread the filling between the layers and chill the cake.
Before serving, top the cake with sifted powdered sugar and lemon slices, if desired

My Crazy Cupcakes start with a classic sweet sponge. This recipe acts as your Master Cupcake recipe. No matter what flavor you are making you will never need another cupcake recipe again. This cake is fluffy moist and sweet, making it the perfect canvas for whatever flavors you and your family are craving.

After you prepare the sponge you simply add in your choice of mix-ins. From classics like Red Velvet and Carrot Cake, to fun flavors like Chocolate and Peanut Butter, I have you covered. My personal favorite is the Birthday Cake Cupcake! 

All of these flavors are topped off with everyone’s favorite part, loads of frosting and extra toppings. These Crazy Cupcakes are a sight to behold, and perfect for a party or to bring to a friend. This recipe is one of my favorites as it takes something as simple as a plain cupcake recipe and transforms it into the little personalized mini cakes of your dreams! 

Below are just a few of my flavor ideas but you can make so many more. Let me know in the comments below what you make!
Ingredients

Crazy cake dough
1 cup (8 oz / 240 g) sugar
1 cup (8 oz / 240 g) butter, softened
4 eggs
1 cup (8 oz / 240 g) all purpose flour
1 teaspoon of baking powder
2 tablespoons of milk

Muffins with carrot cakes

½ spoonful of grated carrot
1 teaspoon raisins, chopped
¼ teaspoon cinnamon
1 teaspoon chopped walnuts
Ice cream cheese to cover
Chocolate muffins and peanut butter
1-2 teaspoons of cocoa powder, sifted (according to taste)
1 tablespoon peanut butter
Peanut butter ice cream for the cover
Reeses peanut butter tartlets to decorate (optional)
Lemon and cranberry muffins
1 teaspoon of lemon zest and percupcake
2 tablespoons fresh blueberries
1 teaspoon of vanilla extract
Butter icing to cover
Lemon zest to decorate

Instructions

Preheat your oven to 350 ° F (180 ° C) and line up a cupcake tray with cupcake liners.
In a stand mixer with a whisk, beat the butter until it is frothy.
Add sugar and cream with sugar and butter until light and pale in color.
Add your eggs one at a time, making sure they are fully incorporated between each one. Then add the milk.
Add the dry ingredients and mix until a smooth mixture is formed. Do not mix too much.
To flavor your cupcakes: Take a ¼ cup (4 tablespoons) of crazy muffin batter in a bowl.
Then, depending on the flavor you want to mix in your supplements.
Bake 16 to 18 minutes, then remove from oven and let cool completely before frosting.

Notes

For peanut butter icing: a tablespoon of peanut butter should flavor 4oz / 125g buttercream frosting, but it depends on your taste. I suggest you try on the fly.
This amount should freeze 4 cupcakes depending on how you use it.

What you need

1 pkg. (3.4 oz.) JELL-O Vanilla Instant Flavor Pudding
3/4 cup cold milk
1-1 / 2 cups thawed WHIP COOL Whipped Topping, divided
1 cup each fresh raspberries and sliced strawberries
1/4 cup blackberries
1 pkg. (10.75 oz.) Frozen pound cake, thawed
1/4 cup orange juice

  DESELECT ALL ADD TO LIST SHOPPING

Beat pudding mix with milk in medium bowl 2 min. Stir in 1 cup COOL WHIP. Combine berries; reserve 1/2 cup.
Cut cake into 3 layers.
Brush cake layers with juice.
Stack cake on a plate, filling each layer with half of the remaining berries and pudding mixture. Top with remaining COOL WHIP and reserved berries. Refrigerate 4 hours.

1- Heat the oven to 350 ° F. Spray the bottom only of the 15x10x1 pan or 13x9 inch pan with a cooking spray. In a large bowl, mix the biscuit mixture, butter, and egg until smooth. Pink Applesauce

Making your own applesauce couldn't be easier! The pink color will vary based on the apples you choose. Varieties such as McIntosh, Macoun, Empire or most dark red skinned apples will work.
Ingredients
  • 10 apples (McIntosh, Macoun, Empire or red skinned)
  • 3 Tbl Butter
  • 3 Tbl Sugar
Instructions
  1. Preheat oven to 350 degrees.
  2. First, prepare the apples by washing them well. You will be leaving the skins ON.
  3. Core the apples and place each one atop a square of aluminum foil.
  4. Into the cored apples, insert butter and sprinkle will sugar. Wrap each apple and place all on a parchment or Silpat lined baking sheet and bake for one hour.
  5. Once cooked, let cool slightly and using a food mill (shown here) or with a spoon, scrape the flesh from the skin. Be sure to add any juice as well. Blend into a smooth puree.
