The slow cooker French toast casserole is a mouth-watering yet weight loss friendly way to start your day as it allows you to enjoy the rich, sweet taste of French toast, but with much fewer calories.

Ingredients

  • 2 whole eggs
  • 2 egg whites
  • 1 1/2 cups 1% milk
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 9 Slices whole grain bread
Filling Ingredients:
  • 3 cups apple pieces, diced
  • 3 tbsp honey
  • 1 tsp lemon juice
  • 1/3 cup diced raw pecans
  • 1/2 tsp cinnamon

Step By Step Preparation

  1. In a medium-sized bowl, add whole eggs, egg whites, cinnamon, vanilla extract, 2 tbsp honey, and milk. Whisk to combine.
  2. Spray the inside of the slow cooker with nonstick cooking spray.
  3. In a small mixing bowl, add all the filling ingredients and stir so all the apple pieces are coated. Set aside.
  4. Cut bread slices into triangles and place one layer of bread (approx. 6 triangles) on the bottom of the slow cooker and add 1/4 of the filling. Repeat until there are 3 layers of bread; what is left of the filling, add to the top.
  5. Pour egg mixture over bread, cover and cook on low for 4 hours (or until bread has soaked up the liquid).
Optional: Drizzle with 100% pure maple syrup.
